I love breakfast. If I could eat breakfast for every meal, I probably would most of the time. I also love to cook. I dream of cooking meals for my family someday. So, it's only natural that when I get the chance, I try out new recipes for me and Alex. I've found a few that are super easy and he loves them almost as much as I do, so I make and modify them a lot.
My favorite recipe right now is a Brown Sugar Oatmeal Pancake one that I originally found on allrecipes. However, I've made it so many times that I've modified it a lot.
I'm actually lactose intolerant so I have to change a lot of recipes to accommodate my annoying condition. While it can be very frustrating, and oftentimes it means I have to make half with dairy and half without, it's also been a little fun, learning to find alternatives to dairy that still taste almost as good.
Ingredients you will need:
1 cup almond milk or yogurt
2 T applesauce
1 tsp vanilla
1 egg
1 cup flour
1/2 cup brown sugar
1/2 t salt
1/2 t baking soda
Tips for ingredients before I get into the making of these delicious pillows of yumminess!
First, I use Original Silk Almond Milk. I've tried all the kinds of almond milk that both Almond Breeze and Silk have to offer and this is my favorite. It's the perfect balance of sweet and not sweet and it's low in calories. Second, you can use vegetable oil instead of applesauce but Alex and I didn't notice any difference, so I figured I may as well cook a bit healthier.
Well, back to the actual making of the pancakes. Mix the milk/yogurt with the applesauce, egg and vanilla. Then add the dry ingredients and mix all together. Drop batter onto a skillet and flip once you see bubbles on the top of the pancakes. And there you have it! Delicious pancakes! See, that was easy, right?
I usually use a bit of peanut butter and syrup on top before diving in!
